It's been awhile since I wrote anything on this site and I miss communicating with the professionals in the pastry field. In fact, since giving up my position as editor of Pastry Art & Design - now titled Dessert Professional - I haven't written much of anything anywhere.

Since as long as I can remember I wanted to be an artist. A photographer, specifically. I got my first camera (a 35mm manual rangefinder) before entering high school and by the time I was 17 I had purchased my first SLR (an Olympus OM-1) and started working for a professional portrait and landscape photogapher. At the age of 22 I entered the photograhy program at Rhode Island School of Design - where my horizons expanded exponentially. (RISD even had a culinary arts program at the time.)

Each day seems to be filled with one bit of bad economic news after the other. No sooner do the banks declare good profits then analysts tear them down for shady although legal accounting practices. Unemployment is up and we have a hard time feeling as if this will ever end. BUT - it will end! And when it does we will need to assess the damage and hopefully not have too deep a hole to crawl out of.

Hi everyone. I'm hoping someone on this site can help me find some information. I do pastries and desserts for both retail and wholesale in a small town. I know what to charge for retail, but wholesale pricing seems to be a topic that not many people around here are familiar with. Has anyone done wholesale pastry work before? Have you been thinking about volunteering in Phoenix this year?
My Carymax partner, Tina Korting, and I will be organizing this year's volunteer assignments soon. Basically, the sooner you can sign up -- and the longer you're available -- the "better" the assignment.

I just wanted to give everyone a heads up about a pretty serious scam that is being done to pastry chefs around the country. I received a phone call today from someone very close to me asking me if we were going to have an event this year in Phoenix. She wanted to know if the National Pastry Team Championship and the World Pastry Forum was cancelled.
Wow. Where did that come from? Not once did I ever consider cancelling these events.
