Knives for sculpted cakes

Hello all-I am very excited that this event is so close! I need some advice though. We are supposed to bring our own knives for the sculpted cakes with Bronwen. What is a good size blade for this purpose? I got a 12", but I'm afraid it might be a little overkill. There was also an 8" or a 10". What will work best?Thanks for your time-MarisaSee More

I work with my mom running our family business, Josef's Vienna Bakery & Cafe in Reno, Nevada. I do all of the decorating: Petit fours, hand-decorated cookies, party cakes, and (my favorite) wedding cakes. I've been doing this for almost 9 years, and I love it more all the time!
