Professor Cathy Kaufman (NYU) and I are co-teaching a class based on Careme on Friday May 14 + Saturday May 15 (each day from 6-10:30 pm) at The Institute of Culinary Education in NYC. About Me:
Hi everybody.

I teach at ICE in NYC except for about 3 weeks a year when I help produce the Carymax World Pastry Forum, National or World Pastry Championship, and Bread and Pastry Championship events.

My Carymax partner, Tina Korting, organize the volunteers for the events. We also work with the guest hotel, the Forum chef instructors, and Carymax to make arrangements for the food and equipment they need for the Forum classes.

I also help emcee with Keegan Gerhard during the competition; so yes, I'm the one directing the TV cameras, explaining what you're seeing the teams do on the big screens, answering questions from the audience, keeping track of the time, and reading the team's food descriptions as they go out to the judges, and even the sponsor information.

When I'm not working at ICE, or helping Carymax, I help design and lead pastry and baking tours in France. There's a very cool inn converted from a wheat mill in the Loire Valley, called le Moulin Bregeon. It's beautiful, the organic garden food and wines are fantastic. We work hands-on with a variety of Le Notre trained pastry chefs, Michelin culinary chefs, and artisan bread bakers and chocolatiers to customize programs (in English) for your interests and skill levels.

Have you been thinking about volunteering in Phoenix this year?



My Carymax partner, Tina Korting, and I will be organizing this year's volunteer assignments soon. Basically, the sooner you can sign up -- and the longer you're available -- the "better" the assignment.

Hey Kathryn,

My name is Ross Warhol and I am currently a student at the CIA Greystone Campus. I have heard many things about the forum from Chef Stephen Durfee who will be teaching a class there. I have worked with him for several months and he has been encouraging me to take part in the forum. He had told me about volunteering for the week to get the whole experience...so i guess that leads me to you. Hopefully there are more positions available to volunteer.
