I'd like to mold a semi-freddo and other items in long thin (aprox. 1" to 2" diameter by 4" or 5" long) cylindrical molds. I can't seem to find the right equipment to this. I'd prefer something that's metal so I can use heat/blow torch to release the item from the form quickly. I'd rather not use plastic, which would require lining the mold with acetate.

The only thing I can think of is the forms used to wrap cannoli dough. I could go to the hardware store, but I don't know what pipe material would be food and heat safe to buy.

Does anyone know of a source or what type of pipe to buy?

you should research any companies that deals with any stainless steel material , there are a lot of companies that make ss sinks , ss tables ect.. that if you bring them a sample of what you need they will duplicate it for you . Good luck!!!!!

So is stainless steel the only metal that is food safe when heated, etc...?
Just in case anyone else is looking.....I found long thin cannoli forms which should work well, at JBPrince.
