Please tell us what your favorite parts of the recent world pastry forum classes and what classe(s) did you enjoy most and which did you feel gave you the most exciting and inspirational information. I loved watching the hand on chocolate classes where they made chocolate showpieces with chocolate fashion high heeled shoes and the chocolate showpiece with the TV in it! Let us know!
I always enjoy Chef Hitz's classes. Laminates have always been one of my favorite aspects of the pastry industry, both in production and consumption. The Entremet class with Stephane Glacier was my favorite, followed by Chef En-Ming Hsu and Chef Donald Wressel. All of these classes were straight forward, and offer techniques and ideas that you can go back to your kitchen and implement immediately. Jim Romdall was a pleasant addition, and the Molecular Gastronomy meets Mixology demo was so fun! I enjoyed all the other classes as well.
Was blown away when viewing the results of the hands on chocolate showpieces class, so much so that if it's offered again, I may opt to take that instead of my 5th demo class schedule.
I would also like to thank all of the Chef Instructors who took time out of their busy schedules to teach us, some of them I've had the pleasure of absorbing their ideas multiple times.
New contacts made, friendships formed, the networking opportunities are seemingly endless. This event is second to none and shouldn't be missed by anyone who shares the passion for Pastry.
Hi Michael, so nice to hear from you I agree I hope that I get to take at least one class or at least sit in on something next time. I just got to live vicariously through my student friends that were attending! I did get to eat some of Ciril's goodies and the chocolates that were made at least. Keep us up to date on what you are doing and post pictures of your work when you can.

I have been attending this event since the start. Every year these classes get better and better. I do not know how they do it. I can not wait for next year.
To pick just one class is impossible. After speaking with my students (Chef Marys Kids) - they all agree. Every class was full of information and a very well worth while experience. We all have used and are using the recipes from our classes.
This is an ideal oppertunity for any Chef instructor to expand his or her knowledge. These classes give you the knowledge to be current with the latest trends and techniques. I also feel that every Chef Instructor should speak about this event to their students and encourage them no matter what level, to come take the Forum classes. I have Baking 1 students as well as advanced students attending the Forum.
These classes are the best anyone can take. I am already getting my group together for next year. Thank you to all the Chefs that taught us. You were all fantastic! I can not pick just one class. But I do hope to see you next year!
