Chef Franz Ziegler is an independent consultant in the pastry field and has been offering his skill and talent as a “think tank” since 1996. He is the author of the award winning books Magic Chocolate, Chocolate Fantasy, and mürb & knusprig (crumbly and crispy). His latest book "Magic Marzipan“ will be released in summer 09.
Franz has extensive experience judging international competitions and has served as President of the Jury for Pastry Team Championship events since 2007.
He coached the Swiss Pastry Teams that competed at the 2002, 2004, and 2006 World Pastry Team Championships. In 2004, he even stepped in two weeks before the competition to replace the ailing team captain.
