Professor Cathy Kaufman (NYU) and I are co-teaching a class based on Careme on Friday May 14 + Saturday May 15 (each day from 6-10:30 pm) at The Institute of Culinary Education in NYC. Full details on the ICE website www.iceculinary.com (although I can answer questions on the historic dessert effort). We hope to create a completly edible nougatine, chocolate and sugar structure (decorated with marzipan) over 2 days and fil it with Careme-style desserts. At the end, we will enjoy a meal with Cathy's savory group. It should be an education, fun and delicious event. Hope you can join the party!
